![]() We are fans of Miso and this was a fun way to use it with the crispy Panko on top. Super quick and easy but has a sophisticated flavor. I’m thinking that I’ll toss the leftover miso butter with roasted cauliflower. I served roasted little potatoes alongside. I did not add the butter to the asparagus, as I wanted to just enjoy this spring vegetable. Also, the thought of grating 9 cloves of garlic felt unbearable to me, so I blitzed them in my mini chopper-next time I’ll grate them, as the grated ginger overpowered my minced garlic. After the cod is cooked place a tablespoon of butter into the pan and baste the fish with it for that extra indulgent flavor.Miso is one of my favorite flavor profiles, so this recipe got my attention immediately! It’s very good, but next time I’d omit the sugar from the miso butter.I like to place my cod under the broiler for the last 2-3 minutes to get a nice caramelized glaze on top.Leave your cod at room temperature for at least 20 minutes before roasting.Use a good non stick pan that can be heated to a high heat and also be used in the oven.I like to brush some more glaze on top a few times because the flavor is amazing! The cod will cook quickly so keep an eye on it. Glaze the cod with the miso and then transfer the pan to the hot oven. Let the cod cook for a few minutes then turn it over. Add the oil and the gently place the cod into the pan. This is done by heating a good non stick oven proof pan on the stove to a high heat. The cod will be roasted in the oven but first you need to get a nice sear on it. Set aside until you need to glaze the cod Just combine the ingredients in a bowl and whisk until smooth. bottle of this in your fridge at all times! Sesame oil– A little goes a long way and the flavor makes things taste incredible.Soy sauce– I like to always try and use low sodium just because of my salt intake.Miso paste– White miso paste is what I used and you can usually find it in the produce section by the vegetarian meats.Also always try and get a thick even cut of cod, try and avoid the thin pieces of the tail end. Too much water will make the fish steam rather than roast and it’ll be harder to get that perfect sear. Cod– Fresh is best but frozen will also work, just make sure to let it thaw out completely and then pat it dry with paper towels as frozen fish tends to hold some water.If you need some extra tips, check out my other post all about how to cook cod. Many people still end up feeling a little intimidated when they have to cook fish but cod along with salmon are two of the easiest types of fish to cook. It’s not that expensive, it’s easy to cook and tastes buttery and delicious! There are many ways to cook your favorite fish like poaching or pan frying like this cod in a citrus basil sauce, but roasting it in a really hot oven is my favorite.
